- 1 c. onions, chopped
- 1/4 c. cooking oil
- 1 1/2 c. rice (uncooked)
- 2/3 c. green peppers, minced
- 1/3 c. parsley, minced
- 3 c. chicken stock
- 1 tsp. salt
- 1/4 tsp. pepper
Directions

1Saute onions in salad oil until tender, but not browned.

2Add remaining ingredients.

3Pour into a 2-quart baking pan.

4Cover. Bake in oven at 350° for about 45 minutes or until rice is tender. Toss lightly with a fork before serving.
