  • 1 c. onions, chopped
  • 1/4 c. cooking oil
  • 1 1/2 c. rice (uncooked)
  • 2/3 c. green peppers, minced
  • 1/3 c. parsley, minced
  • 3 c. chicken stock
  • 1 tsp. salt
  • 1/4 tsp. pepper

Directions

    Saute onions in salad oil until tender, but not browned.

    Add remaining ingredients.

    Pour into a 2-quart baking pan.

    Cover. Bake in oven at 350° for about 45 minutes or until rice is tender. Toss lightly with a fork before serving.
