- 2 c. cooked rice
- 2 eggs, beaten
- 1/3 c. cooking oil
- 2 tsp. salt
- 2 c. sharp Cheddar cheese, grated
- 1/2 c. parsley
- 1 small onion, chopped
- 1 large green bell pepper, chopped
- 1 clove garlic, minced
- 2 (10 3/4 oz.) cans cream of chicken soup
Directions

1Cook rice and cool.

2Add eggs, oil, salt and cheese; stir.

3Add onion, garlic, parsley and green pepper; stir well.

4Grease a casserole.

5Put in rice mixture and pour undiluted soup over the top.

6Mix together and bake, uncovered, at 350° for 45 minutes.

7If too dry, add 1/3 cup oil.
