  • 6 Tbsp. olive oil
  • 3/4 c. green onions
  • 3/4 c. bell pepper
  • 1 c. Uncle Ben's converted rice
  • 2 c. chicken broth
  • salt
  • pepper
  • red pepper
  • pimento
  • 1/4 c. parsley

Directions

    Saute onion and pepper in olive oil.

    In casserole dish, combine the rest of ingredients.

    Add the onions and pepper. Cover and bake at 375° for 35 to 45 minutes or until rice is done. Stir to mix the rice and vegetables.
