Ingredients

  • 2 cups vegetable stock
  • 3 spring onions, trimmed and sliced
  • 2 teaspoons garlic, minced
  • 8 ounces peas, frozen
  • 12 cup celery, chopped
  • 4 12 ounces spinach, roughly chopped
  • 12 cup cream

Directions

    Place the Stock, Spring Onions and Garlic in a pan.

    Add Salt and Pepper to this, cover and bring this to boil.

    Boil until the Onions are soft, then add the Peas and Celery and continue to boil on high heat.

    Once the mixture comes to boil remove the lid.

    After a minute, add Spinach and further boil for 1-minute until the leaves are just tender.

    Next add the Cream and blend immediately.

    Add the seasoning according to your choice and serve.
