Green Split Pea Soup

- 1 pkg. green split peas
- 2 medium carrots, diced
- 2 stalks celery, diced
- 8 c. water
- salt and pepper to taste
Directions

1Soak peas in cold water overnight.

2Sort and drain.

3Add water and bring to a boil.

4Skim off top and add vegetables.

5Simmer 2 or 3 hours, stirring from time to time.

6Add more water if necessary or

7if the soup is too thick.

8Season according to taste.
