Green Tapenade

  • 3 3/4 cups pitted green olives
  • 8 anchovy fillets in oil
  • 6 teaspoons capers
  • 1 garlic clove

    Shred the olives (several times) and the remaining ingredients in a food processor fitted with the blade. Mix more or less fine according to your taste. If the tapenade seems a little bit dry, add a little bit of olive oil at the end. Mix well. Serve with bread sticks or toasted baguette slices. Will keep in the refrigerator in an airtight container for a few days.
