- 3 c. flour
- 2 c. sugar
- 2 c. green tomatoes, strained
- 2 tsp. vanilla
- 2 eggs
- 1/2 tsp. salt
- 1 c. chopped nuts
- 1 c. oil
- 1 tsp. almond extract
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/4 tsp. baking powder
Directions

1Place green tomatoes in blender; puree then strain to get out all the liquid.

2In a large bowl beat together sugar, eggs, green tomatoes, salt, oil, vanilla and almond.

3Sift together flour, baking soda, baking powder and cinnamon.

4Add to egg mixture. Pour into 2 greased and floured 9 x 5-inch loaf pans.

5Bake at 350° for 40 to 60 minutes or until done.

6Cool on wire rack and remove from pans.

7Bread may be frozen for future use if desired.
