Green Tomato Pie

  • 2 large deep dish pie shells
  • 2 large Vidalia onions, thinly sliced
  • 4 to 6 large green tomatoes, thinly sliced
  • 2 Tbsp. fresh chopped chives
  • 1 tsp. dried basil
  • 1 tsp. sugar
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 1/3 c. mayonnaise
  • 1 tsp. lemon juice
  • 1/2 c. grated sharp cheddar cheese

Directions

    Bake crusts 15 minutes in a 350° oven.

    Cook onion in boiling water for 5 minutes, drain and arrange on bottoms of pie crusts. Arrange tomatoes on top of onion.

    Sprinkle with chive, basil, sugar, salt and pepper.

    Combine mayonnaise, lemon juice, and cheese.

    Spread over top and bake 20 to 25 minutes at 375°.

    Let stand 10 to 15 minutes before serving.
