  • 3 firm green tomatoes
  • 1 egg
  • 3 Tbsp. milk
  • 1/2 tsp. salt
  • 1/4 tsp. white pepper
  • 1 c. flour
  • 1/4 c. cracker crumbs
  • dash of salt
  • 1 c. vegetable oil (for frying)

    Rinse, trim and cut tomatoes in 1/4-inch slices. Beat egg with milk, salt and pepper. In another bowl, combine flour, cracker crumbs and a dash of salt. Dip tomato slices in the egg mixture, then in the flour mixture. Heat oil to 350° in a heavy skillet and gently cook tomato slices about 3 minutes on each side. Drain excess fat on a paper towel. Serves 6.
