- 1 lb. beet greens, Swiss chard or spinach
- 2 Tbsp. olive oil
- 1 medium onion, chopped
- 2 large garlic cloves, chopped
- 1 c. long grain white rice
- 2 c. boiling water
- 3 Tbsp. sliced, toasted almonds
- salt and black pepper to taste
Directions

1Rinse greens thoroughly.

2Cut stems into 1/2-inch pieces. Chop leaves.

3Heat oil in a heavy saute pan over medium heat.

4Add onions; saute 5 minutes, stirring often.

5Add stems; saute 2 minutes.

6Add leaves.

7Cover; cook over low heat, stirring occasionally, 5 minutes or until wilted.

8Add garlic and rice; sprinkle with salt and pepper.

9Mix with greens.

10Add water. Cover and cook over low heat, without stirring, until rice is tender, about 18 minutes.

11Taste and adjust seasonings.

12Serve sprinkled with toasted almonds.

13Makes 2 to 3 main dish servings or four side-dish servings.
