  • 1 2/3 c. flour
  • 1/2 tsp. each: salt and pepper
  • 1 broiler chicken, skinned and cut up
  • 1 Tbsp. olive oil
  • 4 c. chicken broth or stock
  • 1 large egg
  • 2 large egg whites
  • 1 c. milk
  • 3 Tbsp. butter or margarine
  • 3 Tbsp. minced parsley
  • 1 tsp. chopped thyme or 1/4 tsp. dried thyme
  • 1/2 c. sliced mushrooms
  • 1/2 c. sliced green onions (sauteed with mushrooms)

Directions

    Combine 1/3 cup flour with 1/4 teaspoon salt and pepper.

    Coat chicken in mixture.

    Cook chicken in moderately hot oil for 4 minutes on each side.

    Add stock and bring to boil.

    Lower heat and simmer 15 minutes.
