  • 1 lb. crabmeat, picked, over, cartilage discarded and any liquids squeezed out
  • 1/4 c. fine bread crumbs
  • 1 egg, beaten
  • 1 Tbsp. mayonnaise
  • 1/2 tsp. (or to taste) Worcestershire sauce
  • 1/2 tsp. dry mustard
  • 1/2 tsp. salt
  • 1/4 tsp. white pepper
  • 3 Tbsp. minced fresh parsley
  • all-purpose flour
  • 2 eggs, slightly beaten
  • bread crumbs
  • oil for greasing grill
  • 2 to 3 c. parsley sprigs to spread on grill
  • Mustard Sauce

    Prepare crabcakes:

    Combine crab, 1/4 cup fine bread crumbs, egg, mayonnaise, Worcestershire sauce, mustard, salt, pepper and the 3 tablespoons minced parsley in a deep bowl.

    Form into six firm patties.

    Roll patties in flour, then dip into the beaten eggs.

    Roll in bread crumbs.
