  • 3 serrano peppers more or less to adjust spiciness
  • 1 red onion
  • 2 large garlic cloves
  • 1/4 cup cilantro
  • 1 lime for juice
  • 1/2 teaspoon kosher salt
  • 1 pinch black pepper

    Start the grill - medium high heat

    Chop the red onion into quarters

    Grill the tomatillos, peppers, and onion until skins are blistered and well marked

    In a blender, puree peppers, tomatillos, garlic, and lime juice. Add onions and cilantro, pulse until coarsely chopped
