Grilled Herbed Chicken

  • 1/2 tsp. dried whole basil
  • 1/2 tsp. dried whole thyme
  • 1/2 tsp. dried whole oregano
  • 6 boneless chicken breast halves (1 1/2 lb.), skinned
  • 1 Tbsp. olive oil
  • juice of 1 lemon

    Combine basil, thyme and oregano in a small bowl; set aside. Trim excess fat from chicken.

    Rinse chicken with cold water and pat dry.

    Place between 2 sheets of waxed paper.

    Flatten to 1/4-inch thickness, using a meat mallet or rolling pin.

    Brush surface of chicken with olive oil.

    Sprinkle with lemon juice and reserved herbs.
