- 1/2 tsp. dried whole basil
- 1/2 tsp. dried whole thyme
- 1/2 tsp. dried whole oregano
- 6 boneless chicken breast halves (1 1/2 lb.), skinned
- 1 Tbsp. olive oil
- juice of 1 lemon
Directions

1Combine basil, thyme and oregano in a small bowl; set aside. Trim excess fat from chicken.

2Rinse chicken with cold water and pat dry.

3Place between 2 sheets of waxed paper.

4Flatten to 1/4-inch thickness, using a meat mallet or rolling pin.

5Brush surface of chicken with olive oil.

6Sprinkle with lemon juice and reserved herbs.
