Grilled Mushrooms With Scrambled Eggs

- 4 medium portobello mushrooms, stems removed
- 1 tbsp butter
- 4 None eggs
- 2 tbsp heavy cream
- 1 tbsp chopped parsley
- 1 tbsp chopped dill
- 1 tbsp snipped chives
- 2 tbsp shaved Parmesan cheese
- None None Toast, to serve
Directions

1Preheat broiler on high. Line a baking pan with foil.

2Place mushrooms on prepared pan. Season to taste. Broil 4-5 mins, until tender and juicy.

3Meanwhile, melt butter in a medium skillet on medium heat. Whisk eggs and cream in medium bowl. Season. Cook 3-4 mins, stirring, until almost set.

4Spoon eggs onto mushrooms. Sprinkle with herbs and Parmesan cheese. Serve with toast.
