- 1 large, round soft crusted loaf of bread
- 4 tablespoons sweet butter, softened
- 2 tablespoons Picholine olives, pitted and chopped
- 2 teaspoons dried oregano
- 1 tablespoon lemon zest
- 2 tablespoons extra-virgin olive oil
- Gray salt and freshly ground black pepper
Directions

1Preheat a stovetop grill or griddle.

2Cut the bread in half lengthwise.

3Hollow out the insides.

4Set aside

5Make compound butter by combining butter, olives and oregano.

6Spread and even layer of compound butter on each cut surface of bread.

7Reassemble the pieces.

8Brush outside of bread with the olive oil and season with salt and pepper.

9Place the bread on the griddle and top with pans or other type of weight to gently press the bread while it is toasting.

10Griddle or grill about 4 minutes on each side, or until golden brown.

11Serve warm.
