- 2 tablespoons nuoc mam (see Notes)
- 1 teaspoon red wine vinegar
- 2 garlic cloves, minced
- 2 teaspoons water
- 1/2 teaspoon honey
- 4 tablespoons olive oil
- Salt to taste
- 1 (1 1/2-pounds) whole tilapia, cleaned and scaled
Directions

1For the dipping sauce: In a small bowl, combine nuoc mam, vinegar, garlic, water and honey.

2Set aside.

3Prepare a charcoal fire.

4Brush grill lightly with olive oil.

5Combine remaining olive oil and garlic with salt.

6Coat fish.

7Grill until flaky, 3 or 4 minutes per side.

8Serve with dipping sauce.
