  • 2 whole Peppers, Green Red Or Yellow
  • 1 whole Large Onion
  • 2 whole Zucchinis
  • 1 teaspoon Cumin
  • 2 teaspoons Paprika
  • 1 teaspoon Oregano
  • 1 teaspoon Rosemary
  • 1 teaspoon Adobo Seasoning
  • Salt And Pepper, to taste
  • 6 pieces Tinfoil

    Chop peppers, onion, and zucchini into bite size pieces and place one serving size of each on each piece of tinfoil (split evenly between the 6 packets). Mix your seasoning together in a bowl and then sprinkle evenly between veggie clusters. Take it easy on the salt if you use the adobo, which already has salt in it. Make a pocket with your tinfoil, closing each loosely. Grill for about 25-30 minutes at about 400 degrees. Check halfway through and move to the top shelf or away from direct heat if the bottoms are getting burned.
