- 1 3/4 cups bread flour
- 1 tbsp olive oil
- 1 tsp sugar
- 1 tsp salt
- 1/2 tsp instant yeast
- 1 egg, beaten, to glaze
- Sesame seeds, to sprinkle
- Coarse sea salt, to sprinkle
Directions

1Mix the flour, oil, sugar, salt, and yeast together in a large bowl.

2Add 1/2 cup water and stir to make a soft dough.

3Knead the dough on a lightly floured work surface for 10 minutes.

4Place in a lightly oiled bowl, turn to coat, and cover tightly with plastic wrap.

5Let stand in a warm place about 1 hour, until doubled.

6Lightly grease 2 baking sheets.

7Preheat the oven to 425F (220C).

8Briefly knead the dough on a lightly floured work surface.

9Break off pieces of the dough about the size of a walnut and roll each piece into a long stick about the thickness of a pencil.

10Place the grissini about 1/2 in (1cm) apart on the baking sheets.

11Brush the bread sticks with the beaten egg and sprinkle them liberally with sesame seeds and coarse sea salt.

12Do not let the dough rise after shaping.

13Bake the grissini for 12-15 minutes, or until golden and crisp.

14The sticks should snap easily when broken and not be doughy in the middle.

15Transfer to a wire rack and leave until completely cooled.
