  • 2 cups hominy grits cooked
  • 2 cups cooked chicken ground, or flaked fish
  • 2 tablespoons chopped onion
  • 1 teaspoon salt
  • 1 teaspoon worcestershire sauce
  • 1/2 cup bread crumbs or cracker crumbs
  • 1 egg beaten
  • 1 dash pepper

Directions

    Chill then shape into 12 croquettes.

    Roll in additional crumbs; dip in egg and roll again.

    Pan fry until golden brown.
