Ingredients

  • 2 lb. ground beef
  • 2/3 c. each, chopped: onion, celery and green pepper
  • 2 cloves garlic, minced
  • 1 (15 oz.) can tomatoes
  • 1 (15 oz.) can tomato sauce
  • 2 (6 oz.) cans tomato paste
  • 1 (6 oz.) jar sliced mushrooms
  • 3 c. frozen okra (cut)
  • 2 1/2 tsp. Italian seasoning
  • 2 bay leaves
  • 1 1/2 Tbsp. parsley flakes
  • 1 1/2 tsp. dried basil
  • 1 tsp. each: oregano, chili powder and onion powder
  • 1/2 tsp. cumin powder
  • salt and pepper
  • 1/2 c. water

Directions

    Cook beef, onion, celery, green pepper and garlic in heavy Dutch oven until meat is brown; drain.

    Stir in remaining ingredients.

    Simmer, uncovered, for 1 hour. Remove bay leaves. Serve over hot rice.

    Makes 1 1/2 quarts gumbo.
