Ingredients
- 1 (3 lb) whole chickens
- 6 onions, chopped
- 4 tomatoes, chopped
- 2 tablespoons peanut oil
- 6 okra, sliced
- 1 eggplant, cubed
- 3 cups roasted peanuts
- 6 cups cold water
- 2 teaspoons salt
- 1 teaspoon pepper
- 6 hard-boiled eggs
Directions

1Cut up onions, tomatoes, chicken, okra, and eggplant.

2Fry peanuts and mash with a mortar and pestle, or run through grinder until mashed.

3This can also be done in a blender.

4Mix peanuts with water, salt, and pepper.

5Add all stew ingredients except eggs.

6Boil one hour.

7Shell eggs and put in stew at last minute.

8Serve with rice, bananas, or coconut as side dishes.
