Gruyere and Walnut Biscuits

Ingredients

  • 225 g gruyere, grated
  • 225 g unsalted butter, room temperature
  • 1 teaspoon cayenne pepper (or paprika)
  • 1 teaspoon salt
  • 350 g plain flour, sifted
  • 100 g walnuts, chopped

Directions

    In a bowl, cream together teh gruyere and butter.

    Sift the salt cayenne and flour into another bowl, then gradually add the cheese mixture, then nuts and mix well with hands to form a dough.

    Divide the dough into 2 and shape into logs, 4cm ( 1 1/2 inch) in diameter.

    Wrap in plastic wrap and chill1 hour.

    Preheat oven to 180C.

    With a sharp knife cut ito 5mm ( 1/4 inch) thick slices.

    Lay on a baking sheet lined with baking paper.

    Bake 15-20 minutes until lightly brown.

    transfer to a wire rack to cool, then Store in an airtight container.
