  • 3 ripe avocados
  • 2 fresh serrano chilies
  • 3 tablespoons finely chopped white onion
  • coarse salt to taste

    Halve and pit avocados.

    Scoop flesh into a bowl.

    Wearing rubber gloves, finely chop chilies, including seeds if desired, and add to avocados with onion and salt.

    Mash mixture with a fork.

    Guacamole may be made 2 hours ahead and chilled, its surface covered with plastic wrap.
