Ingredients

  • 1/2 lb. cut fresh okra or 1 box frozen cut okra
  • 3 ears fresh corn, cut off cob or 2 boxes frozen kernel
  • 1 large onion, diced
  • 3 fresh peeled tomatoes or 1 can, drained and chopped
  • 1 qt. chicken or other broth
  • 1/3 c. raw rice
  • 1 tsp. salt
  • 1 tsp. garlic powder or salt
  • good pinch red pepper

Directions

    In a skillet sprayed with Pam or salad oil, fry on medium heat the okra, corn, onion and tomatoes.

    This will fry up juicy. Continue cooking until it cooks down to almost dry.

    (If you use frozen corn, boil instead of fry.)
