Ingredients
- 1/4 c. vegetable oil
- 3/8 c. flour
- 3/4 c. chopped onion
- 1/3 c. chopped celery
- 1/3 c. chopped green pepper
- 2 garlic cloves, minced
- 2 - 3 c. chicken stock or water
- 2 bay leaves
- 2 - 2 1/2 tsp. creole seasoning
- 1/8 tsp. thyme
- 2 tsp. worcestershire
- 8 oz. frozen okra
- parsley to taste
- chicken pieces & smoked sausage chunks
- shrimp optional
Directions

1In large stock pot heat oil.

2Add flour.

3Cook and stir on med. heat until mixture is the color of peanut butter and has a nutty aroma.

4Be sure to stir constantly or it will burn.

5Add onion, celery, green pepper, and garlic and saute 1-2 minutes. Slowly add chicken stock or water.

6Stir until combined.

7Add okra and seasonings.
-
8Simmer on low 1 - 1 1/2 hours.

9Add meat the last 30 minutes.

10Serve in a bowl over rice.

11Top with tabasco or other hot sauce if desired.
