- 2 Tbsp. bacon fat
- 1 1/2 lb. potatoes
- 1 large onion, thinly sliced
- 1 c. shredded sharp Cheddar cheese
- salt and pepper to taste
- paprika
Directions

1Use half of bacon fat to grease a 2-quart casserole.

2Wash potatoes but do not peel. Slice very thinly.

3Fill casserole with alternate layers of potatoes, onion and cheese.

4Sprinkle each layer with salt and pepper.

5Top layer of casserole should be potatoes.

6Use remaining bacon fat to dot top layer of potatoes. Sprinkle with paprika.

7Cover and microwave on High for 20 to 22 minutes.

8Makes 4 servings.
