- 5 whole Small Red Potatoes
- 1 whole Shallot
- 1 pound Fresh Halibut
- 1/2 Tablespoons Olive Oil
- 32 ounces, fluid Chicken Broth
- 1 Tablespoon Dried Dill
- Salt And Pepper, to taste
- 1 cup Half-and-half
Directions

1Dice your red potatoes, shallot, and halibut.

2Place the diced shallot into a large pot along with the olive oil. Saute until slightly tender (approximately 5 minutes).

3Into the pot, add in the chicken broth, diced potatoes, dill, pepper, and salt. Bring to a boil and then simmer for around 20 minutes or until the potatoes are tender.

4Add in the diced halibut and half-and-half. Cook for another 5 minutes or until the halibut is cooked through.

5Serve and enjoy!
