Halibut-Vegetable Dinner Bake(Serves 6)

Ingredients

  • 2 lb. halibut steaks or other fish steaks (fresh or frozen)
  • 2/3 c. thinly sliced onion
  • 1 1/2 c. chopped, fresh mushrooms
  • 1/3 c. chopped tomato
  • 1/4 c. chopped green pepper
  • 1/4 c. chopped, fresh parsley
  • 3 Tbsp. chopped pimiento
  • 1/2 c. dry white wine
  • 2 Tbsp. fresh lime or lemon juice
  • 1/2 tsp. salt
  • 1/4 tsp. dill weed
  • 1/8 tsp. white pepper
  • lemon wedges

    Thaw fish, if frozen; cut into serving size portions.

    Arrange onion in bottom of greased 12 x 8 x 2-inch baking pan.

    Top onion with fish.

    Combine remaining ingredients and spread on top of fish.

    Combine wine, lime juice and seasonings; pour over vegetables.

    Bake in preheated 350° oven for 25 to 30 minutes or until fish flakes easily when tested with a fork.
