Ham And Cauliflower Curry

Ingredients
- 1 head cauliflower (about 2 1/4 lbs), cut into florets
- 7 oz long-grain rice
- 1 tbsp butter
- 3 tbsp flour
- 1-2 tsp curry powder
- 1 2/3 cups vegetable stock
- 3/4 cup heavy cream
- 7 oz carrots, peeled and thinly sliced
- 4 oz cooked ham, diced
- 1 1/4 cups frozen peas
- 1/3 cup hazelnuts, chopped and toasted
Directions

1Cook the cauliflower in boiling salted water for 4-6 mins. Drain and refresh with cold water. Set aside.

2Cook the rice in boiling salted water according to the package directions. Melt the butter in a medium saucepan. Sprinkle with the flour and curry powder and cook and stir 30 seconds. Add the stock, cream and carrots and simmer for 5 mins. Add the cauliflower, ham and peas and simmer for 3 mins.

3Ladle the curry into bowls and sprinkle with the nuts. Serve with the rice.
