Ham And Corn Fritters

- 1/2 c. diced ham
- 1 scallion, chopped
- 4 Tbsp. butter
- 1/2 c. water
- 1/2 c. flour
- 2 eggs
- 1/2 c. corn kernels
- 1/4 tsp. dried sage
- oil
- salt and pepper to taste
Directions

1Cut butter into 4 chunks.

2Bring butter, water, 1/4 teaspoon salt and 1/8 teaspoon pepper to a boil in a saucepan and boil until butter melts.

3Remove from heat and stir in flour all at once.

4Stir over low heat until smooth and comes away from sides of pan in a ball.

5While hot, put in mixing bowl and beat in eggs, one at a time.

6Stir in ham, scallion, corn and sage.

7Drop by heaping tablespoon into fat and fry until golden, about 3 to 5 minutes.

8Drain on paper towel.
