Ingredients
- 2 tsp. butter
- 2 tsp. oil
- 2 c. cooked, diced ham
- 1 c. uncooked rice
- 1/2 c. sliced ripe olives
- 1 small onion, chopped
- 1/2 c. chopped celery
- 1/4 c. chopped pepper
- 1 1/2 c. chicken broth
- 2 tsp. parsley
Directions

1Heat butter and oil in skillet.

2Saute onion, celery and pepper for 3 minutes.

3Add ham and mix well.

4Saute for 5 minutes. Add rice and cook 2 minutes, until rice is coated.

5Add broth and boil over high heat.

6Put lid on skillet and reduce heat to simmer.

7Cook for 23 minutes (do not lift lid).

8Remove lid.
-
9Add parsley and ripe olives.

10Toss rice with fork until fluffy.
