Ingredients

  • 2 tsp. butter
  • 2 tsp. oil
  • 2 c. cooked, diced ham
  • 1 c. uncooked rice
  • 1/2 c. sliced ripe olives
  • 1 small onion, chopped
  • 1/2 c. chopped celery
  • 1/4 c. chopped pepper
  • 1 1/2 c. chicken broth
  • 2 tsp. parsley

Directions

    Heat butter and oil in skillet.

    Saute onion, celery and pepper for 3 minutes.

    Add ham and mix well.

    Saute for 5 minutes. Add rice and cook 2 minutes, until rice is coated.

    Add broth and boil over high heat.

    Put lid on skillet and reduce heat to simmer.

    Cook for 23 minutes (do not lift lid).

    Remove lid.

    Add parsley and ripe olives.

    Toss rice with fork until fluffy.
