Ham & Cheese Omelet Rolls

- 4 oz. cream cheese, softened
- 3/4 c. milk
- 2 Tbsp. all purpose flour
- 1/4 tsp. salt
- 12 eggs
- 8 oz. ham, finely chopped. (1 1/2 cups)
- 1 1/2 c. cheddar cheese
- 1/4 c. green onions (with tops) thinly sliced
- 2 Tbsp. Dijon mustard
Directions

1Preheat oven to 375 degrees.

2In a bowl combine cream cheese and milk, whisk until smooth.

3Add flour and salt, mix well.

4In a separate bowl gently whisk eggs then add cream cheese mixture, mix well.

5Pour in a long cookie sheet (parchment paper may be used). Bake for 30 to 33 minutes or until eggs are puffy and golden. Meanwhile, finely chop ham.

6Remove omelet from oven, immediately spread dijon mustard, and sprinkle 1/2 of cheese, ham and green onions.

7Sprinkle the rest of the cheese and roll up, (like a jelly roll).

8Let stand 5 minutes allowing cheese to melt.

9Slice and serve.
