Ingredients

  • 2 qt. water
  • 1 medium onion, diced
  • 2 c. ham, diced (can also use a ham bone)
  • 6 to 8 potatoes
  • 4 to 6 carrots
  • 10 to 12 oz. frozen corn
  • 1 c. half and half
  • salt and pepper to taste

Directions

    Put 2 quarts water in large soup kettle.
  2. 2
    Add onion and ham to water and boil 1/2 hour.
  3. 3
    Add remaining ingredients.
  4. 4
    Cook until potatoes are tender, then mash with back of spoon about half of the potatoes to help thicken broth.

    Add half and half and serve hot.

    Good with fresh bread.
