- 1 cup onion, finely chopped
- 3 tablespoons vegetable oil, divided
- 2 cups rice
- 8 ounces ham, diced
- 2 eggs, slightly beaten
- 8 ounces broccoli
- 3 tablespoons soy sauce
- 1 dash black pepper
Directions

1Cook rice according to package directions.

2Steam broccoli until crisp-tender.

3Heat large deep non-stick skillet over medium heat.

4Add 1 tablespoon oil and onion.

5Stir-fry 4 minutes until tender.

6Add 1 tablespoon oil, rice and ham.

7Stir-fry 8 minutes until hot.

8Push rice mixture to the side of the skillet.

9Add last tablespoon oil and eggs.

10Cook and stir until eggs are thickened throughout but still moist.

11Stir eggs into rice mixture.

12Stir in broccoli, soy sauce and pepper.

13Cook until heated through.

14Serve.
