- 4 c. cooked, diced beets
- 1/2 c. sugar
- 1 tsp. salt
- 1 Tbsp. cornstarch
- 1/4 c. vinegar
- 1/4 c. water
- 2 Tbsp. butter
Directions

1Mix the sugar, salt and cornstarch.

2Add the vinegar and water; stir the mixture until it is smooth.

3Cook it for 5 minutes, then add the beets and let it stand for 30 minutes.

4Just before serving, bring the beets to a boil and add the butter. (Omit the salt when using canned beets which have been salted.)
