- 2 12 lbs beets
- 23 cup fresh orange juice
- 2 tablespoons cider vinegar
- 2 teaspoons butter
- 14 cup packed brown sugar
- 1 tablespoon cornstarch
- 14 teaspoon salt
- 18 teaspoon black pepper
- orange zest
Directions

1Leave root and 1 inch of stem on beets; scrub with brush.

2Cover with water and boil.

3Cover, reduce hea, simmer for 40 minutes or until tender.

4Drain; peel and cut into 1/4 thick slices.

5Combine juice, vinegar and butter in bowl.

6Combine sugar, cornstarch, salt, pepper in large saucepan.

7Gradually add juice mixture, stirring well with whisk.

8Bring to a boil over medium heat; cook until thick (about 2 minutes) stirring costantly.

9Add beets, tossing gently to coat.

10Garnish with orange zest.
