- 3/4 c. sugar
- 2 tsp. cornstarch
- 1/3 c. vinegar or lemon juice
- 1/3 c. water
- 4 c. cooked beets
- 3 Tbsp. butter
- 1/4 tsp. salt
- 1/8 tsp. pepper
Directions

1Add vinegar (or lemon juice) and water to combined sugar and cornstarch.

2Bring to a boil and boil about 5 minutes.

3Add beets and simmer to heat through, about 1/2 hour.

4Add butter, salt and pepper to season.
