- 1/4 c. sugar
- 1 Tbsp. cornstarch
- 1/2 tsp. salt
- dash of pepper
- 3/4 c. liquid from beets and water
- 1/4 c. vinegar
- 1/4 c. undiluted frozen orange juice
- 1 (16 oz.) sliced beets
- 1 tsp. grated orange rind
Directions

1Combine sugar, cornstarch, salt and pepper into a 1-quart pan. Stir the beet liquid, vinegar and orange concentrate into sugar mixture.

2Cover.

3Cook 5 to 7 minutes or until mixture is glossy and slightly thickened, stirring twice.

4Add sliced beets and heat until beets are hot.

5Sprinkle orange rind over top before serving.

6Serve warm or chilled.
