- 1 (16 oz.) can sliced beets
- 1/4 c. sugar
- 2 Tbsp. vinegar
- 1 Tbsp. grated orange peel
- 1 1/2 tsp. cornstarch
- 2 Tbsp. orange juice
Directions

1Drain beets, reserving 2 tablespoons juice. Set beets and juice aside. In a saucepan, combine sugar and cornstarch.

2Add vinegar, orange juice and beet juice. Bring to a boil.

3Reduce heat and simmer for 3 to 4 minutes or until thickened.

4Add beets and orange peel.

5Heat through.

6Yields 4 to 6 servings.
