- 3 c. sugar
- 3/4 c. shortening
- 4 eggs
- 2 c. mashed, cooked yams
- 1 (6 oz.) can frozen orange juice concentrate, thawed
- 3 1/2 c. flour
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 2 tsp. nutmeg
- 1/2 tsp. allspice
- 1/2 tsp. ground cloves
- 1 1/2 tsp. salt
- 1 c. chopped pecans
Directions

1Combine sugar, shortening and eggs in mixer bowl.

2Beat until smooth.

3Add yams and orange juice concentrate; mix well.

4Mix flour, baking soda, cinnamon, nutmeg, allspice, cloves and salt together.

5Add to batter, 1/3 at a time, mixing well after each addition.

6Stir in pecans.

7Spoon into 4 greased and floured coffee cans.

8Bake at 350° for 40 to 45 minutes or until loaves test done.

9Remove to wire rack to cool.
