Ingredients

  • 2 lb. beef stew, chunked
  • 1/3 c. quick cooking tapioca
  • 1 tsp. basil
  • 1 Tbsp. cumin seed
  • 1 tsp. salt
  • 4 carrots, sliced
  • 4 cloves garlic, minced
  • 2 onions, chopped into eighths
  • 2 (16 oz.) cans tomatoes
  • 1 (10 oz.) pkg. frozen corn
  • 8 small potatoes, quartered
  • 2 small zucchini, sliced thin

Directions

    Mix all ingredients, except corn, potatoes and zucchini in greased baking dish with lid.

    Bake for 2 hours and 30 minutes at 325°; stir occasionally.

    Add corn and potatoes; bake for 1 1/2 hours.

    Stir in zucchini.

    Cover and let stand 10 minutes.
