Ingredients
- 2 lb. beef stew, chunked
- 1/3 c. quick cooking tapioca
- 1 tsp. basil
- 1 Tbsp. cumin seed
- 1 tsp. salt
- 4 carrots, sliced
- 4 cloves garlic, minced
- 2 onions, chopped into eighths
- 2 (16 oz.) cans tomatoes
- 1 (10 oz.) pkg. frozen corn
- 8 small potatoes, quartered
- 2 small zucchini, sliced thin
Directions

1Mix all ingredients, except corn, potatoes and zucchini in greased baking dish with lid.

2Bake for 2 hours and 30 minutes at 325°; stir occasionally.

3Add corn and potatoes; bake for 1 1/2 hours.

4Stir in zucchini.

5Cover and let stand 10 minutes.
