  • 3 c. cooked, diced potatoes
  • 3 Tbsp. all-purpose flour
  • 1 c. shredded Cheddar cheese
  • 1 Tbsp. finely chopped onion
  • 1/4 c. whipping cream
  • 1 tsp. salt
  • 1/8 tsp. black pepper
  • 3 Tbsp. butter or margarine

Directions

    Combine potatoes with flour, onion, cream, salt and pepper. Heat butter in heavy skillet.

    Add potatoes.

    Pack firmly to make an even layer and brown.

    Reduce heat and cook for 20 minutes. Top with shredded Cheddar cheese during last 5 minutes of cooking. Fold over like an omelette onto serving dish and serve immediately.
