Ingredients

  • 3 c. flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 2 c. sugar
  • 3 eggs, beaten
  • 1 c. oil
  • 2 c. bananas, mashed
  • 2 tsp. vanilla
  • 1 tsp. cream of tartar
  • 1 (8 oz.) can crushed pineapple (undrained)
  • 1 c. coconut

    Preheat oven to 350°.

    Grease and flour 2 loaf pans or one 9 x 13 pan and set aside.

    Combine flour, soda, cinnamon and salt in bowl; set aside.

    Mix remaining ingredients in large bowl.

    Add dry ingredients and mix well.

    Spoon into prepared pans and bake for 50 to 65 minutes or until wooden pick inserted in center comes out clean.

    For loaf pans, let stand for 10 minutes, then remove from pan onto wire rack.

    Wrap tightly to store.
