- 3 c. flour
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 2 c. sugar
- 3 eggs, beaten
- 1 c. oil
- 2 c. bananas, mashed
- 2 tsp. vanilla
- 1 tsp. cream of tartar
- 1 (8 oz.) can crushed pineapple (undrained)
- 1 c. coconut
Directions

1Preheat oven to 350°.

2Grease and flour 2 loaf pans or one 9 x 13 pan and set aside.

3Combine flour, soda, cinnamon and salt in bowl; set aside.

4Mix remaining ingredients in large bowl.

5Add dry ingredients and mix well.

6Spoon into prepared pans and bake for 50 to 65 minutes or until wooden pick inserted in center comes out clean.

7For loaf pans, let stand for 10 minutes, then remove from pan onto wire rack.

8Wrap tightly to store.
