Ingredients

  • 1 1/2 c. diced carrots
  • 1/2 c. diced onions
  • 1 c. diced green pepper
  • 1 c. diced celery
  • 1 tsp. salt
  • 1 c. water
  • 1/4 c. sugar
  • 1/4 c. brown sugar
  • 2 Tbsp. cornstarch
  • 2 Tbsp. vinegar
  • 1/2 tsp. cinnamon
  • 1/2 tsp. ground cloves
  • 20 oz. can pineapple
  • 1 (8 oz.) can water chestnuts

Directions

    Combine carrots, onions, green pepper and celery.

    Cook until tender, about 20 minutes.

    Drain well.

    In a saucepan, combine salt, water, sugar, brown sugar, cornstarch, vinegar, cinnamon and cloves with pineapple juice, drained from can of pineapple.

    Cook until thick.

    Add water chestnuts, drained and sliced, and pineapple chunks.

    Add to sauce; then add to vegetables and heat.
