- 2 cups apples, diced
- 1/2 cup Splenda sugar substitute
- 1 egg
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla
- 1/2 cup white flour
- 1/2 cup whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup nuts (optional)
- 1/2 cup raisins (optional)
Directions

1Toss apple with Splenda set aside.

2Whisk egg, applesauce, & vanilla.

3Add the remaining ingredients. Mix well.

4Add apple mixture. Mix well.

5Pour into 12 greased muffin tins.

6Batke at 325 for 25-30 minutes.
