- 1 chopped red bell pepper
- 3 king oyster mushrooms
- 4 chopped baby carrots
- 2 celery ribs
- 13 onion
- 3 garlic cloves
- 28 ounces stewed tomatoes
- 14 ounces tomato sauce
- 10 ounces kidney beans
- 12 ounces corn
- 3 tablespoons chili flakes
- 3 tablespoons chili powder
- 1 14 teaspoons salt
- 1 cinnamon stick
- 3 dried apricot halves
- 14 cup raisins
- salt & pepper
Directions

1To pot add onion, pepper, mushrooms, carrots, celery, and garlic; cook till tender.

2Add stewed tomatoes, tomato sauce, beans, corn, chili flakes and powder, salt, pepper, cinnamon, apricots and raisins.

3Break up the stewed tomatoes while it's cooking so there are chunks.

4Bring to boil.

5Reduce to simmer for 30 minutes or more.take out cinnamon.
