  • 1 chopped red bell pepper
  • 3 king oyster mushrooms
  • 4 chopped baby carrots
  • 2 celery ribs
  • 13 onion
  • 3 garlic cloves
  • 28 ounces stewed tomatoes
  • 14 ounces tomato sauce
  • 10 ounces kidney beans
  • 12 ounces corn
  • 3 tablespoons chili flakes
  • 3 tablespoons chili powder
  • 1 14 teaspoons salt
  • 1 cinnamon stick
  • 3 dried apricot halves
  • 14 cup raisins
  • salt & pepper

Directions

    To pot add onion, pepper, mushrooms, carrots, celery, and garlic; cook till tender.

    Add stewed tomatoes, tomato sauce, beans, corn, chili flakes and powder, salt, pepper, cinnamon, apricots and raisins.

    Break up the stewed tomatoes while it's cooking so there are chunks.

    Bring to boil.

    Reduce to simmer for 30 minutes or more.take out cinnamon.
