Healthy Egg Scramble

Ingredients
- 1 cup baby spinach
- 2 sweet peppers
- 1 chopped green onion (as much as you like)
- 1 sprinkle of salt and pepper
- 1 sprinkle of mrs dash onion and herb seasoning
- 1 sprinkle of shredded pepper jack cheese
- 1 chopped up chicken lunch meat (i used rotisserie flavor from Oscar Meyer)
- 1 smidge :) of butter
- 2 large eggs
Directions

1Heat nonstick skillet at a setting of 5 on the stove.

2Add your smidge of butter and evenly coat pan with it

3Add chopped sweet peppers and green onions and let simmer in the pan for 2 minutes or so, stirring occasionally

4Add chicken to the skillet and stir

5Add spinach and Mrs Dash seasoning and stir.

6Let the spinach cook down till it's all wilted (approx.

72 minutes while stirring occasionally)

8Crack your eggs in a bowl and add your salt and pepper to them.

9Beat them until they are fully incorporated

10Pour eggs over veggie mix in skillet

11Scramble them up!

12Turn burner off and toss cheese in.

13Put on a plate and enjoy!
