Ingredients

  • 2 c. King Arthur whole wheat flour
  • 2 c. oatmeal
  • 2 Tbsp. baking powder
  • 1/2 c. brown sugar
  • 3/4 c. golden raisins
  • 1/2 bag blueberries
  • 2/3 bag cranberries
  • 2 mashed bananas
  • 3 chopped apples
  • cinnamon
  • 2 c. skim milk
  • 1/2 c. vegetable oil
  • 2 egg whites

Directions

    Mix dry ingredients in large bowl and wet ingredients in smaller bowl.

    Add the mashed bananas to wet mixture.

    Add raisins, blueberries and cranberries to the dry mix and stir thoroughly.

    Add chopped apples to dry mixture.

    After both bowls are well mixed, pour the milk mixture into the dry mix, barely incorporating the wet and dry mixes.

    Spoon into 24 muffin tins. Bake at 400° for 25 minutes.
