Ingredients

  • 1 lb. lamb for stew
  • 1 cup red lentils (may substitute brown)
  • 1 cup wild rice blend
  • 1 cup sliced carrots
  • 1 cup leek
  • 1 cup celery
  • 8 cups water
  • 2 tblsp vegetable bullion
  • 2 tblsp olive oil
  • 2 tblsp fresh thyme
  • 1-2 tsp ground cloves (or to taste)

Directions

    1. Brown lamb in olive oil in a large stew pot, set aside in a bowl.

    2. Add water to pot, bring to a slow boil.

    3. Add lentils, rice and bullion, cook for 15 min.

    4. Add vegetables, lamb, thyme and ground cloves, cook for an additional 30 minutes or until lamb is fully cooked.
